Remove from the oven and carefully spoon the cooking juices over the chicken. Return to the oven and cook for a further 20-25 minutes until the chicken crown is golden brown. Remove from the oven and pierce the thickest part of the crown with a skewer to check that there is no pink meat and that the juices run clear. Rest for 5-10 minutes then place on a chopping board and carve. All appliances vary. These are guidelines only.
