What it is. A preservative that stops browning and microbial growth.
Why it is used. Used in dried fruit, wine, some soft drinks and processed potato.
What the evidence says. Not a cancer concern, but a well established trigger for asthma symptoms and sensitivity in some people, which is why it is a declarable allergen. Clear, strong evidence, but the concern applies to a specific group rather than everyone.
Permitted, but must be declared on the label when above a small threshold because of the allergy risk.

In harmony with nature. Organic potatoes Great results To cook on the hob. Before cooking: Wash or peel and cut into evenly sized pieces. Place potatoes in a large saucepan. Add enough cold water to just cover. During cooking: Bring to the boil, cover and simmer gently until tender. 2222 To cook on the hob Low to moderate heat 20-25 mins After cooking: Drain. Check food is piping hot. To mash. Follow instructions to cook on the hob. Put the drained potatoes back onto the warm hob for 1 minute and gently shake them to dry. Mash until smooth and creamy. Add a splash of warm milk, butter and seasoning if liked. To roast. Before cooking: Preheat oven. Put 2-4 tablespoons of vegetable oil into the roasting tray and place in the oven. Peel and cut the potatoes into evenly sized pieces. Place potatoes in a large saucepan. Add enough cold water to just cover and bring to the boil for approximately 10 minutes. Drain thoroughly, then holding the lid firmly on the saucepan, shake vigorously to roughen the surfaces. Carefully remove the hot tray from the oven and place the potatoes gently into the hot oil, turn to coat and season. Place tray on the middle shelf of the oven. During cooking: Turn halfway through cooking. Cook until golden and soft in the middle. Do not allow to become too dark. To roast 220°C/Fan 200°C/Gas7 35-55 mins After cooking: Check food is piping hot. All cooking appliances vary. This is a guide only. At home, refrigerate for freshness. Wash before use.
